This post is a testament of my love for the oven and its imminent power to allow this exhausted mother to prepare one-pan meals that are not only healthy but are also, tasty.
Here’s my take on the one pan honey garlic chicken with broccoli and potatoes:
Ingredients
- 4 large pieces chicken thighs or boneless/skinless chicken breasts
- 3 medium-sized russet potatoes (quartered)
- 3 tablespoons olive oil (separate 1 tbsp from 2 tbsps)
- 2 tablespoons brown sugar
- 2 tablespoons butter
- 2 tablespoons honey
- 6 cloves garlic (minced)
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 2 medium bunch broccoli (include stalk and florets)
- 3 medium-sized bell peppers (red, orange, yellow seeded and quartered)
- 1 cup spring onion (chopped)

Instructions
- Preheat oven to 400 degree. Lightly spread oil all over pan or coat pan with non-stick spray.
- In a small bowl, mix together olive oil, brown sugar, butter, honey, garlic, basil, and oregano. Set aside.
- Place potatoes in a single player in the pan. Season with salt and pepper and drizzle with olive oil.
- Brush chicken thighs with the honey-garlic mixture and then arrange them on top of the potatoes. Pour remaining mixture on top of the chicken pieces.
- Place potato-chicken layer inside the oven and cook for 30 to 35 minutes or until chicken is cooked.
- Add broccoli and roast for another 10 minutes.
- Add bell pepper and broil for five minutes.
- Remove pan from oven and top with chopped spring onion.
- Eat heartily!
Recipe Notes
- Most recipes call for baby red potatoes but I use russet potatoes since we always have this type at home.
- If I ran out of olive oil at home, I just use peanut oil. Adds flavor to the dish and it smells good too.
- Some recipes call for Dijon mustard and parsley, we don't like both ingredients so we skip them. We add bell peppers though because, obviously, we looove them!
- How to check if the chicken is cooked without using a meat thermometer? I just take out the pan from the oven, make small slices on the top of the chicken.
