Baked potatoes with spring onion and bacon bits

  1. Preheat oven to 350 degrees F. Scrub potatoes and pierce the skin several times with a fork. Cut potatoes in half lengthwise.
  2. Placed potatoes in baking pan. Season with salt, pepper, and garlic powder. Drizzle with olive oil.
  3. Bake for 35 to 40 minutes. Meanwhile, cook bacon on low heat starting with a cold pan. Make sure the strips are crispy before removing the bacon from the pan. Cool down.
  4. Chop spring onions and set aside. Be generous if you like spring onions like me!
  5. When potatoes are cooked, remove from oven. Sprinkle with bacon bits and spring onions. Best paired with hard-boiled eggs!
Recipe Notes
  • I wrote that this recipe is good for two people but honestly, I can finish this on my own!
  • I looove spring onions on anything so I may have written 1/4 cup here but I can go as far as 1 cup when my spring onion addiction is at its peak.
  • Hard-boiled eggs are, for me, the best pair for this dish. I usually boil my eggs for seven to eight minutes for a “medium” outcome. This I learned from Food Network. Check it out here.
  • You can also add cheese to this recipe. I am not particular with any kind. I just add anything we have in the fridge. Sometimes, I use parmesan. Other times, I use cheddar and even mozzarella.
